Miche is a large, hearty French country bread that was originally made during a time where families did not have ovens in their home. Since they had to travel to use a community-type oven, loaves were made bigger to last longer. Our einkorn miche is loaded with raisens and walnuts to provide a touch of sweetness with a nutty crunch. It makes for a nutritious breakfast, addition to soups, or even as a tasty treat if you add butter and sprinkle cinnamon and coconut sugar!
This isn't your typical sourdough bread using all-purpose or bread flour- we use the whole einkorn flour and don't sift out the bran or the germ. Not only is this how breads have traditionally been made and how our ancestors ate them, it yields a heavier/denser bread that will provide more sustenance to your meal. Since the process of making sourdough bread takes 2 days to complete, please consider this timeframe when purchasing. Thank you!
